Amy’s Granola Bars
3 ½ cups quick-cooking (1-minute) oats
¾ cup butter or margarine, softened
1 ½ cups packed brown sugar (or try less)
½ cup honey
1 teaspoon vanilla
1 cup unbleached white flour
1 teaspoon baking powder
½ teaspoon salt
½ cup raisins (optional)
1 cup chopped nuts (optional)
1 cup semi-sweet mini chocolate chips
Preheat oven to 350 degrees F. Bake/toast the oats on a large, ungreased 1(5x10x1-inch) cookie sheet for 15-20 minutes or until lightly browned; stir once halfway through to toast evenly. Cool.
Meanwhile, beat butter or margarine, sugar, honey, and vanilla until creamy. Add eggs one at a time, beating until incorporated. Add flour, baking powder, and salt, stirring until just combined. Stir in oats, raisins, nuts, and chocolate chips.
Grease cookie sheet (the same one used to toast oats) with shortening or oil spray. Spread dough evenly in pan. Bake for about 20 minutes or until lightly browned. Cool. Refrigerate for about 30 minutes to set chocolate, then cut into bars. Yield: 36 to 49 bars
